Chicken Kabsa




Ingredients
1 Kg Chicken cut into large pieces
4 Cups Plain Rice
2 Cinnamon pods
3 Cloves
3 Bay Leaves
1 Chicken stock cube
3 Dry Lemons
4 Tbsp Butter
1/4 Cup Sunflower Oil
1 Tbsp Ginger cut into pieces
4 Tbsp Kabsa spices mix
2 Onions cut into small cube sized pieces



Directions
Put the cinnamon, eliachi, bay leaves,dry lemon, cloves, salt, and chicken stock cube into boiling water. Cook for 35 mins or until the meat is just well cooked and put it into separate pot.
then in a pot melt butter, oil and saute onion, ginger and cut tomatoes and its sauce. Put baharat/kabsa powder in it.
Now add the soaked basmati rice in it and mix. Add the hot meat/chicken mix stock in to it. Make sure not to stir the rice, while adding the stock in it.



Arrange the meat pieces on top of it when done then, cover and cook for some more time till the stock evaporates, on low heat.
Serve hot with Olives, tomato & onion chutney, and boiled eggs on top.
